One-man operation trying to get enterprise clients. Any advice?

I'm a solo developer building a SaaS app that targets the enterprise market.

How can I get over any hurdles to sell to them? I'm guessing that large corporations won't like buying software from a one-man operation.

Their concerns are valid that smaller guys can go under and their time invested in the solution goes to waste. How can I overcome that predisposition?

You can offer to put the code in source code escrow. With this, your code, documentation, etc. all are given to a third party who will distribute it to the customer if you go out of business. This way, they'll know even if you go under that they'll still have the source and can redeploy it locally or whatever they need to do to keep going with it.
